Archer's Red Pepper Jelly Pieces of red, yellow and orange pepper sparkle like jewels in this exotic jelly.
1 can apple juice
2 large cooking onions
4 red sweet bell peppers
1 yellow & 1 orange sweet bell pepper
5 pkgs. certo
1 tsp. cayenne pepper
6 Tbsp. lemon juice
5 Tbsp. white wine vinegar
15 cups white sugar
You will need a large stainess steel pot. Finely chop peppers and onions. Pour apple juice into pot. Add Cayenne, certo, lemon juice, white wine vinegar. Bring to a rolling boil for 5 mins. while stirring. Add sugar, continue to stir and boil vigourously for 5 mins. Do a gel test, if ok remove from heat. Ladle into sterilized jars and process as directed by manufacturer.
