Archer's Red Pepper Jelly
Pieces of red, yellow and orange pepper sparkle like jewels in this exotic jelly.
  • 1 can apple juice
  • 2 large cooking onions
  • 4 red sweet bell peppers
  • 1 yellow & 1 orange sweet bell pepper
  • 5 pkgs. certo
  • 1 tsp. cayenne pepper
  • 6 Tbsp. lemon juice
  • 5 Tbsp. white wine vinegar
  • 15 cups white sugar


You will need a large stainess steel pot. Finely chop peppers and onions. Pour apple juice into pot. Add Cayenne, certo, lemon juice, white wine vinegar. Bring to a rolling boil for 5 mins. while stirring. Add sugar, continue to stir and boil vigorously for 5 mins. Do a gel test, if ok remove from heat. Ladle into sterilized jars and process as directed by manufacturer.
Hot variation: Add 2-3 tsps. cayenne pepper. YUM!! ***Makes approx. 35-37/125 ml. jars. Enjoy!
