Day's Mini Cakes
Delicious Poppy Seed Cake
  • 2 eggs
  • 1 cup white sugar
  • 1 cup canola oil
  • 1/2 can evaporated milk
  • 1 & 1/2 cups white flour
  • 1 & 1/2 tsp. baking powder
  • pinch of salt (just a small one)
  • 1/2 cup poppy seeds

 Beat eggs, add sugar, beating well. Add oil and beat well. Stir in milk, then dry ingredients in order given. Bake in an ungreased pan @ 325 degrees for 50 min. - 1 hour depending on the size of pans used. Crossley's use a 5 inch across the top round pan for their mini cakes. Let cake brown slightly then pick in centre with a toothpick.

Allow cake to cool 15 mins. before removing from pan.

Crossley Butter Icing

  •  1/3 cup butter
  • 2 Tbsp. milk
  • 1-1/2 cups icing sugar
  • 1/2 tsp. vanilla

Cream butter thoroughly. Add milk and beat well. Gradually blend in sugar until icing is of the right consistency to spread. Add vanilla. Remove cake from pan. Use thread or a large knife to cut cake in 2 pieces (side ways so you have a top and bottom) Fill the centre with homemade strawberry jam. Place top layer over jam and spread icing over cake.

Dip 5 large strawberries in white and dark chocolate and place them on the top of the cake with strawberry bottoms facing up.
Shave dark chocolate and sprinkle on top of cake.
