Banana Dried Fruit Chutney
Make when fresh fruits aren't available

1 1/2 cups mashed banana

1 cup chopped apple, peeled & cored

1 cup chopped dates

1 cup chopped prunes

1/2 cup chopped dried apricots

1/2 cup mixed glace peel

1 cup chopped onion

1 1/2 cups cider vinegar

3 cloves garlic, chopped

1 tsp cayenne pepper

1 1/2 tsp ground coriander

1 tsp ground allsprice

1 tsp ground turmeric

1 tsp grated gingerroot

1 1/2 cups dark brown sugar

1/2 cup water

 

In a lg. stainless steel pot, combine all fruits, onion, vinegar & garlic. Stirring to a boil; simmer 15 min.. Fill boiling water canner with water. Place 6 clean 250ml mason jars in canner over high heat. Add remaining ingredients to simmering mixture. Stirring occasionally, simmer for 15 minutes or until thickened. Pour chutney into sterilized jars to within 1/2 inch of top rim and process according to manufacturer's directions.
