Archer's Oatmeal Cookies
Butter is an essential ingredient in the taste of cookies! You could substitute with oil, but the result won't taste as rich, nor would it have that characteristic cookie crunch. For a chewier consistency, you could use half oil and half butter instead of all butter.


1-1/2 cups all-purpose flour (360ml)

1/2 tsp. baking soda (2.5ml)

1 tsp. cinnamon (5ml)1/2 tsp. salt (2.5ml)

1 egg, slightly beaten (1)

1/2 cup brown sugar (120ml)

1/2 cup white sugar (120ml)

1 cup melted butter (240ml)

1 Tbsp. molasses (15ml)

1/4 cup milk (60ml)

1-3/4 large-flake oatmeal (420ml)

1/2 cup raisins (120ml)

1/2 cup chopped pecans (120ml)


Preheat the oven to 350 degrees F. (180 degrees C.) Have unbuttered cookie sheets ready. Mix the flour, soda, cinnamon and salt together in a bowl. Make a well in the centre of the ingredients. In a separate bowl, mix the egg, brown sugar, white sugar, melted butter, molasses and milk together. Pour the wet mixture into the dry mixture and stir until just combined. Add the oatmeal, raisins and chopped pecans and stir until just combined. Arrange 1-1/2 to 2-inch balls of cookie dough on an unbuttered cookie sheet. Bake until golden brown around the edges, about 12 minutes.
